Bolognese Sauce

Chop chop onion, carrots, and celery, then purée them into a coarse paste.

Coat pan in olive oil. Add veggies, season with salt, and over medium high heat until water evaporates and they brown, 15 to 20 minutes.

Add beef and cook until it browns, 15 to 20 minutes.

Add tomato paste and cook until brown, 5 minutes.

Add wine, cook until it's reduced by half, 5 minutes.

Add water 1 inch above the sauce, add bay leaves and thyme.

Bring sauce to a boil, then reduce to a simmer.

Simmer for 3 to 4 hours. Top off pot with 2 to 3 cups of water as a time as it simmers off.
